A delicious main dish in which flavorsome fried chicken served over Saffron Rice Pulao.


Ingredients
For Pulao :
Basmati rice 2 cups
GheeClick to find more about Ghee 1/3 cup
OnionClick to find more about Onion 1 cup, sliced
GarlicClick to find more about Garlic 2 tsp, minced
Cloves 6
Cardamoms 6
CinnamonClick to find more about Cinnamon 2 sticks, 5cm each
Mace 2 blades
Saffron a big pinch (soaked in little milk)
RaisinsClick to find more about Raisins 2 tbsp
AlmondsClick to find more about Almonds 2 tbsp( blanched and sliced)
For ChickenClick to find more about Chicken :
ChickenClick to find more about Chicken 1 small, about 750 gm
TurmericClick to find more about Turmeric powder tsp
Chili powder 1 tsp
Coriander powder 1 tsp
Black pepperClick to find more about Black pepper powder tsp
Poppy seedsClick to find more about Poppy seeds 1 tbsp
AlmondsClick to find more about Almonds 1 tbsp
Curds cup
Oil or gheeClick to find more about ghee 56 tbsp
OnionClick to find more about Onion cup, sliced
GarlicClick to find more about Garlic 4 flakes, chopped
SaltClick to find more about Salt to taste


Preparation
Wash the rice well. Drain completely.
Add 4 cups of water and soak for an hour.
Heat the gheeClick to find more about ghee in a thick bottomed pan.
Add all the ingredients from onionClick to find more about onion to mace.
Fry till the onionClick to find more about onion is golden brown.
Add the rice with the soaking water. Add saltClick to find more about salt.
Crush the soaked saffron in milk and add to rice.
When the water begins to boil, cover the pan tightly and lower the flame.
Leave undisturbed till the water is absorbed and rice is cooked.
Fry the raisinsClick to find more about raisins and almondsClick to find more about almonds in a table spoon of gheeClick to find more about ghee ( extra) and mix gently in the rice without breaking the grains.

Clean the chickenClick to find more about chicken and wipe dry. Prick all over with a fork.
Powder poppy seedsClick to find more about poppy seeds and almondsClick to find more about almonds together.
Mix them with rest of the masala , curds and saltClick to find more about salt.
Rub some of this paste inside the chickenClick to find more about chicken.
Fill the chickenClick to find more about chicken with some of the pulao and truss securely.
Rub some of the curd mixture over it.
Heat the gheeClick to find more about ghee or oil in a kadai. Fry onionClick to find more about onion and garlicClick to find more about garlic.
Add the chickenClick to find more about chicken and fry, turning the birds carefully a couple of time.
When the chickenClick to find more about chicken is browned, add the remaining curd mixture.
Cover and simmer till the chickenClick to find more about chicken is cooked.
To serve, arrange the pulao on a serving dish.
Untruss the chickenClick to find more about chicken and place over the pulao.
Pour the gravy from the kadai over it.
