Fruit, seeds, and nuts are mixed together in this flavorful snack mix.


Ingredients
1/2 cup butter
1/3 cup honeyClick to find more about honey
1 teaspoon vanilla extract
1/2 cup packed light brown sugarClick to find more about brown sugar
1/3 cup toasted flax seed
1 cup pecans, toasted and chopped
1 cup soy grits
1 cup toasted wheatClick to find more about wheat germ
2 cups shredded coconut
6 cups rolled oats
2 cups dried cranberries
1 teaspoon ground cinnamonClick to find more about cinnamon
1 teaspoon freshly grated nutmegClick to find more about nutmeg
2 oranges, zested
2 egg whites

Preparation
In a large skillet, melt the butter over low heat.
Add the honeyClick to find more about honey, vanilla, and brown sugarClick to find more about brown sugar and stir the mixture until it is melted.
Turn off the heat and add the flax seed, pecans, grits, wheatClick to find more about wheat germ, coconut, oats, cranberries, cinnamonClick to find more about cinnamon, nutmegClick to find more about nutmeg, and orangeClick to find more about orange zest.
Stir the mixture until the dry ingredients are completely covered. Remove from the heat and cool to room temperature.
Preheat oven to 350 degrees F.
When the mixture is cool, add the egg whites and stir to combine. Spread the mixture onto a baking sheet and bake until golden brown, about 15 minutes.
