Stir fry vegetables with cashew nuts is a Chinese stir fry vegetables using assorted vegetables like carrots, baby corn, mushrooms etc.


Ingredients
1/4 cup oil
1 cup mushrooms, sliced
1 large bell pepper red, cut into 1inch
1 cup broccoli
1 cup cauliflower florets
1 cup carrotClick to find more about carrot, diced
2 teaspoon gingerClick to find more about ginger, grated
1/2 cup roasted cashews
2 spring onions
3/4 cup chickenClick to find more about chicken stock
2 tablespoon soy sauce
1 1/2 teaspoon cornstarch
2 tablespoons vinegarClick to find more about vinegar
1 teaspoon saltClick to find more about salt
1/2 teaspoon pepper, ground


Preparation
Heat oil in a large nonstick wok or skillet. Add mushrooms, red pepper, broccoli, cauliflower, carrots and gingerClick to find more about ginger, and stir fry for 3 to 4 minutes or until the vegetables are tender but still crisp.
Cut green onions into 12 inch pieces and add this and cashews nuts to the vegetables and stir fry for 2 minutes.
Combine stock, soy sauce, cornstarch, vinegarClick to find more about vinegar, saltClick to find more about salt, pepper in a small bowl and stir into vegetables and cook for 2 minutes or more or until thickened. Adjust the seasoning with saltClick to find more about salt and pepper.
Serve with plain or fried rice.
