Cauliflower, potatoes, and an enticingly fragrant blend of spices make up this traditional dish.


Ingredients
1 medium sized Cauliflower
2 medium sized PotatoClick to find more about Potato
3 Green chilliClick to find more about Green chilli
2 inch piece GingerClick to find more about Ginger
3 tbsps Oil
1 tsp Cumin seedsClick to find more about Cumin seeds
1/4 tsp TurmericClick to find more about Turmeric powder
1/2 tsp Red chilli powder
2 tsps Coriander powder
SaltClick to find more about Salt to taste
1/4 bunch Fresh coriander leavesClick to find more about coriander leaves


Preparation
Separate the cauliflower into large florets.
Wash thoroughly and drain. Peel, wash and cut the potatoes into one inch sized cubes.
Clean, wash and finely chop coriander leavesClick to find more about coriander leaves.
Remove stems, wash and slit green chillies. Peel, wash and cut the gingerClick to find more about ginger into julienne.
Heat oil in a kadhai, add cumin seedsClick to find more about cumin seeds.
When they crackle, add the gingerClick to find more about ginger julienne and slit green chillies.
Saute for half a minute. Add the vegetables and stir.
Add turmericClick to find more about turmeric powder, red chilli powder, coriander powder and saltClick to find more about salt. Sprinkle some water, cover and cook till done.
Garnish with chopped coriander leavesClick to find more about coriander leaves and serve hot with rotis.
