Hearty potatoes made in a tangy and spicy sauce.


Ingredients
1 1/2 tb Tamarand paste
2 cups Water
8 small Boiled potatoes
1/4 cup CornClick to find more about Corn oil
1 med OnionClick to find more about Onion; thinly sliced
2 tsp Minced fresh gingerClick to find more about ginger
4 GarlicClick to find more about Garlic cloves; minced
1/2 tsp Dried red pepper flakes
1/2 tsp Ground turmericClick to find more about turmeric
1/2 tsp Ground cardamomClick to find more about cardamom
1/2 tsp Ground fennel
1/2 tsp CinnamonClick to find more about Cinnamon
1/4 tsp Freshly ground pepper
SaltClick to find more about Salt


Preparation
Dissolve tamarindClick to find more about tamarind paste in 1 cup water. Let stand 30 minutes. Strain.
Boil potatoes until just tender. Cool completely, then peel. Using wooden skewer, pierce each potatoClick to find more about potato in 4 places.
Heat oil in heavy large skillet over medium heat. Add onionClick to find more about onion and cook until crisp and lightly browned, stirring frequently, about 10 minutes.
Remove from skillet. Add potatoes and brown well on all sides. Remove from skillet.
Pour off all but 1 tablespoon oil from skillet.
Add gingerClick to find more about ginger and garlicClick to find more about garlic and stir 1 minute.
Stir in pepper flakes and turmericClick to find more about turmeric.
Blend in 2 tablespoons water. Mix in onionClick to find more about onion.
Add potatoes, tamarindClick to find more about tamarind liquid and remaining water. Stir in cardamomClick to find more about cardamom, fennel, cinnamonClick to find more about cinnamon and pepper.
Cover and simmer until sauce has thickened slightly, about 15 minutes. Season with saltClick to find more about salt.
