The fresh flavor and crunchy texture of garden vegetables star in this colorful coleslaw. Lightly dressed with vinegar and cream, it gives a refreshing touch to your meal.


Ingredients
1 cup cabbageClick to find more about cabbage, green shredded ,
1 cup cabbageClick to find more about cabbage, red ,
2 small carrots, grated ,
2 spring onions ,
1 appleClick to find more about apple diced, unpeeled ,
1 pear
1-3 cup fresh cream ,
1-2 teaspoon mustard, french ,
2-3 tablespoons mayonnaise ,
1 tablespoon vinegarClick to find more about vinegar ,
saltClick to find more about salt & pepper to taste,
lettuce leaves, crisp .


Preparation
Shred red cabbageClick to find more about cabbage, cut spring onions into slices and dice the pear.
Toss cabbageClick to find more about cabbage, carrotClick to find more about carrot, green onionClick to find more about onionClick to find more about green <a href=onionClick to find more about onion" align="middle" border="0" hspace="2" />, appleClick to find more about apple and pear together in a large bowl. Whisk vinegarClick to find more about vinegar, fresh cream, mayonnaise mustard, saltClick to find more about salt & pepper.
Pour the dressing over the salad and toss well to coat.
Break the lettuce up into large leaves and use to line a salad bowl.
Spoon the vegetable mixture on the top of the leaves.
Refrigerate for 1 hour before serve.
