 Skinless chicken thighs are briefly marinated in peanut butter, soya sauce ginger, vinegar and oil, then they are stir-fried. The whole dish can be made in half an hour, especially if you do a lot of the prep while the chicken is marinating.

   1/2 cup boiling water 1/2 cup creamy peanut butter
 1/4 bottled chilli sauce
 3 tbsp soy sauce
 2 tbsp cooking oil
 2 tbsp vinegar
   4 cloves garlic
  minced 1 tbsp grated fresh ginger
   1/4 tsp paprika or chilli powder
 12 chicken
  thighs skinned(abt 3 lbs) 
 
    1:Start marination in a small bowl gradually stir boiling water with peanut butter.Mix it well then add chilli sauce, soy sauce, oil, vinegar  , garlic  , ginger  and chilli powder and let the mixture cool. 2:Place chicken
  thighs in a ziploc or plastic freezer bag and pour marinade over chicken  and toss and turn to coat chicken  well will marinade. 3:Leave chicken
  in that bag for marination keeping chicken  turning bag occsionaly,place it in refrigrator over night. 3:When you are ready to cook the chicken
  ,For best results cook it over charcoal grill,for that  drain the chicken  first from the marinade discarding the marinade.Place chicken  on grill rack cook both sides well until chicken  is no longer pink or for 50 to 60 minutes. If desired serve it with hot steamed white rice.
