A lovely healthy rice dish, deliciously different, that goes with just about anything, or nothing at all! This rice can be prepared using other vegetables like carrots, potatoes, etc.


Ingredients
1 cup boiled rice
1 egg,beaten
2 green chillies,finely chopped
1/4 cup spring onionClick to find more about onion,sliced
1/4 cup cabbageClick to find more about cabbage,finely sliced
1/4 cup capsicum/green bell pepper,thinly sliced
1/4 cup green peasClick to find more about green peas,boiled
1 tbsp vinegarClick to find more about vinegar
3 tbsp light soy sauce
1 tbsp chilli sauce
1 tsp black pepperClick to find more about black pepper
saltClick to find more about salt to taste
oil


Preparation
Heat 2 tbsp oil in a pan.
Beat egg with saltClick to find more about salt and pepper. Scramble the egg in oil until firm, breaking into small pieces. Set the eggs aside.
Heat extra oil in the same pan.
Add green chillies,spring onionClick to find more about onion, cabbageClick to find more about cabbage, green peasClick to find more about green peas &
capsicum.Stir-fry on medium heat.
Add vinegarClick to find more about vinegar, soy sauce, chilli sauce, saltClick to find more about salt n pepper and mix.
Mix boiled rice and scambled egg and cook on a very low flame for 5 minutes.
serve hot.
