Ingredients
BaiganClick to find more about Baigan 1 big or 3-4 small
Yougurt 1 cup whipped
SaltClick to find more about Salt to taste
Red chillies to taste
HaldiClick to find more about Haldi 1/3 tsp
Garam masalah 1/2 tsp
GingerClick to find more about Ginger and garlicClick to find more about garlic paste 2 tsp
Powdered dhaniya 1 tsp
Green chillies 2-3 chopped
Crushed red chillies 1 tsp
TomatoClick to find more about Tomato puree or tomatoClick to find more about tomato diced 1 cup
Oil for cooking and frying
Onions 2-3 chopped


Preparation
Cut baiganClick to find more about baigan into thin slices.
Pour oil about 2 tbsp in a pan and fry baiganClick to find more about baigan slices to light brown in color. Add oil to pan as needed to fry baiganClick to find more about baigan slices. Set aside fried baiganClick to find more about baigan.
You can skip frying baiganClick to find more about baigan slices if on cholesterol free or calorie reduced diet.
In another pan add oil to make masalah. when the oil is warm add onions. When the onions are light brown add saltClick to find more about salt, haldiClick to find more about haldi, red chili powder (if prefer mild spicy add less red chilli then you usually do because you will be adding green chillies and crushed red peppers later on), garam masalah, daniya powder, tomatoClick to find more about tomato puree, gingerClick to find more about ginger and garlicClick to find more about garlic paste. Cook till the masalah is ready.
Add water in between as needed to prepare the masalah.
Warm the oven to 350 F.
Take a baking pot make a layer of baiganClick to find more about baigan first. Place all baiganClick to find more about baigan slices. now spread all the prepared masalah on top of the baiganClick to find more about baigan slices. Add a layer of yougurt on it. and Garnish with chopped green chillies and crushed red peppers.
Place the baking pot in the oven for 35-40 minutes till the yougurt is thick. Serve hot with naan/rice and raita.
